This started as a casserole with rice.  After being sleeved rice is one of those things that can be difficult so I decided t make a few changes and make it into a soup.  I haven't made it yet and may need to play with the amounts on the soup and Rotel for consistency.
Fiesta Chicken Casserole Soup

3 cup cooked chopped chicken
1 can cream of chicken soup (I used 98% fat free)
1 can Rotel diced tomatoes and chiles, undrained
1 Tbsp Southwestern or Taco seasoning
2 Tbsp milk
2 cups shredded cheddar cheese, reserve for serving
1/2 cup crushed tortilla chips or Doritos, reserve for serving
Chopped green onions, reserve for serving

Combine chicken, rice, soup, Rotel, seasoning &
Cook till heated thru.  Add chips, cheese, chopped green onions, sour cream or plain Greek yogart to garnish

What got me through my chili cravings

Tomato sauce in a can
Beef broth or beef bullion
Chili seasoning
and a little bit of ketchup to sweeten

Cook in a sauce pan to get all the flavors to blend and enjoy.  This was yummy
